Califlower "Potato" Salad
Cauliflower "Potato" Salad
Serves 6 @ 1SP each
6 sliced of short cut bacon - chopped
1 cup 0SP yogurt, (I used high protein yogurt from Aldi)
5 eggs - Boiled and chopped
3 tsp of Dijon mustard
Salt and Pepper to taste
Cut cauliflower into little florets. Boil until just tender (you want to keep them on the firmer side so they do not mush up).
Pan fry chopped bacon and allow to cool.
In a large bowl add yogurt, mustard, spring onions and chopped up boiled eggs.
Once cooled add cauliflower and bacon. Stir and add salt and pepper to taste!
